Here’s my go-to recipe for a grill out. I don’t apologize for ripping this directly from the Babbo cookbook, without alteration in the slightest — you don’t fuck with perfection. Start with a pair of pork chops in a brine: composed of 4 quarts of water, one cup of sugar and one cup of salt (dissolve the salt and sugar in the water before brining the chops). Let them sit overnight in the fridge.

The next afternoon have a few peaches handy. Split them and remove the stone. Season the pork chop and the peach flesh liberally with salt and pepper, splurge on some good, fruity olive oil and dip the peaches flesh down. Make sure your fire is hot (please use natural wood charcoal) when you put the pork chops on the grill. First, I recommend oiling the grate and cleaning it with a split onion. Go for a nice caramelized crust and don’t be afraid of a little pink at the center near the bone. Follow suit with the peaches, get nice grill marks on the flesh side. Finish the plate with a generous drizzle of balsamic, vincotto if you happen to be grilling with a chick you’re trying to impress. The plate of food you’ll be serving is practically a graduate study in layering flavor. Make sure there’s as much Becks as you can fit in your largest cooler on hand.
